End of an era: The Pyrmont Growers Market closes on April 2nd and it is not an April Fool joke...

For 18 years, it has been a monthly gathering of fabulous producers, dedicated food enthusiasts and celebrity Chefs showing their skills in well orchestrated demos. It has been a great help in my food blogger journey as it has given me casual access to the crème de la crème of famous Chefs from around Australia and sometime from further afield. Some of them have become good friends in the process. Also true of dozen of suppliers whose products I have bought, revised and promote (for free...) because they were outstanding and made with love and dedication.
Jill Duplex and Terry Durak, just landed from Melbourne at the time, started this venture in 1998, as they could not find in Sydney the equivalent of the Melbourne markets (and still can't, as there are no city based permanent daily markets in Sydney...) For many years, Joanna Savill relentlessly organised it, cajoling Chefs into spending their Saturday mornings entertaining and educating a smallish group of dedicated followers. I personally started reporting on these events in 2010. More recently, Joanna was replaced by the flamboyant Myffy Rigby, with the occasional help of the elegant Ardyn Bernoth. I was not going to miss out the last edition yesterday. Here is a series of photos and videos taken before and during the panel which was assembled to discuss the future of the food markets in Sydney. It was an interesting discussion curated by Myffy and Ardyn who gently grilled (!) the panelists: Josephine Perry (missy French) and dad Neil Perry (Rockpool), Jill Duplex (SMH), Ronni Kahn of OzHarvest fame and Somer Sivrioglu of Efendy Balmain and now at Barangaroo.

There were some interesting points raised and some proposals made as well as a quick appearance from Pepe Saya aka Pierre Issa.
The best story , I think, was when Somer recounted a conversation with his Dad about visiting the Growers Market, and his Dad asking "are they any other types of markets?. Precious!
I grew up in a culture and at a time where daily markets were the rule, and Mum was shopping almost daily for fresh food. We would then go to the butcher or the fishmonger, and the boulanger, bien sûr...
There is a petition running to open a permanent market somewhere in the City - Haymarket, Surry Hills and Barangaroo were mentioned. There were some "out of place " comments, I thought about the lockout laws and the cost of labour, but overall, it was all very civilised.
You will hear in one of the videos a talk about "imperfect vegetables and fruits" but nobody mentioned the good work done in that sphere by Harris Farm Markets. Nobody either acknowledged the great work done by Joanna Savill over the years, and she was visiting the market. I thought it would have been polite to invite her even briefly...
The quality of these videos is not perfect, but consider them as a record of an interesting way of sending off this 18 year old institution.

Pepe Saya was invited to talk about all things butter and how this market (and Qantas...) helped him growing his business against European Community subsidised Lurpak. Neil Perry also managed to plug a ranting about lock out laws in Sydney, whether or not it was the right audience is debatable, but I like a man with a cause, and in this case two men!

Sydney suburbia hides a host of interesting ethnic restaurants catering primarily for the locals, but for some, their reputation definitely goes far beyond. Da Vinci is a case in point. Prominently displaying its Italian heritage in a stunning mural on the main square, you could be forgiven for thinking you are in rome rather than Summer Hill, Sydney...
"we take pride in knowing every dish we serve is authentic, tasty and good for yu, jut like our mamas used to cook for us" says Nicola on their website... And it shows!

Matthew Evans is a bit of a character - but most Chefs are - have a great sense of humour but is damn serious when it comes to advocate the provenance and the quality of the food you buy and cook with. I do not own a lot of cookbooks, but I cherish one of his - The Weekend Cook. 
​So, when I had a chance of meeting him in the flesh, at Essential Ingredient in Rozelle, I jumped at it and was lucky enough to get a second serving the next day at the SMH Growers Market in Pyrmont. He cooked simple things, but they were full of flavours and freshness. Here is a short illustration of his cooking and philosophy.

First time visit for this blogger to this event taking place in the heritage buildings of the railway carriages maintenance factory, now disused and transformed in a fantastic exhibition and event place. It was a great gathering of indigenous and local producers of all sorts of food and also a great exhibition of organic wines with a number of French winemakers represented by their local distributors or for some in person. It was a great way to recover from a bout of flu!

After promoting the "Imperfects Picks" for vegetables, Harris Farm now jumps on the band wagon of "head-to-tail" philosophy started here by Colin Fassnidge, the cheeky - some say feisty - Chef behind the success of 4 Fourteen in Surry Hills and Four in Hand in Paddington. Brisket, hanger, offals including ears & tail - a delicacy in Spain where they are reserved for the winning toreador - which are common in France's butcher shops and beyond, are becoming more popular in Australia, in part because of their cheaper price, but also because of their heightened taste.
Victor Churchill in Woollhara and Vic;s Meat Market at the Sydney Fish Market were also early promoters, as well as Mike McEnearney from Kitchen by Mike and James Viles from Biota Dining.
The good news, for me at least - is that one can now afford a "Bavette à l'échalote" and shared with friends and family a cut of meat which is rare but not dear here. In Europe, it is the opposite as price follows the rule "what is rare is dear", hence veal liver is almost beyond reach, but here it is -still - affordable. So, go and eat your hearty content of "Curious Cuts" or offals or other delicacies.

The Monday Morning Cooking Club comes to the SMH Pyrmont Growers Market

I came across Lisa Goldberg listening to one the famous interviews that Margaret Throsby conducts every day now around lunch time on ABC Classic FM, my favourite radio station.

So, when I heard that she and all the other members of the MMCC would be at the Pyrmont Market, I jumped at the chance to meet them, even though the meteo forecast was pretty bleak...
But, as serendipity has it, it ended up being a nice morning with barely a few drops of rain!
And meet, we did and had a great chat and even got a slice of their beautiful cake to take home!
They have been at it since 2006 and their main objective is to collate the best recipes from the Australian Jewish Community and beyond. They have published 2 books and rumour has it that a third one is in the making...Stay tuned!
But for today second cooking show (yes, I know, i never make it to the first one...), we were treated to a beautiful zucchini salad, an eggplant and Israeli couscous salad and the grand finale, fig bread and butter pudding. Enjoy the story through these photos before and during the presentation.

Turkish Delights at Everleigh and Pyrmont Markets

Somer Sivrioglu is the happy proprietor of Efendy's, a great turkish restaurant in trendy Balmain in the Inner West of Sydney. I have visited quite early in the piece and have not been back recently, but it was a very happy and delicious experience. Hence why I was keen to revisit Somer's cuisine.
Also, Somer has just released a book, three years in the making, called Anatolia, part travelogue, part recipes book and it is a phenomenal book, beautiful manufactured and designed by Murdoch.

It was a delight to watch and listen to Somer cooking his Turkish Deligths. I got a chance to taste everything and it was deliciously simple and earthy: the turkish version of cucina povera! Perfect!

The new book of Chef Matt Moran: Matt's Kitchen Garden Cookbook
Matt Moran runs an empire of six casual and upmarket eateries in Sydney and Brisbane. I am a regular of his Opera Bar at The Opera House, a nice pre-concert dinner place or an afternoon jazzy  place for a drink with loved ones. I will certainly pay a visit to his garden restaurant in the middle of posh suburb Woollahra, where this latest cookbook comes from. Woollahra is also home of the top butcher shop Victor Churchill, which has recently opened an annex at the Sydney Fish Market.

But before we get to his cooking demo, let's feature a few newcomers and some of our favourites regulars...and we will be starting with cheese!

Small Cow Farm started in 2005 with a small herd of Irish Dexter cows. Nowadays their production encompasses brie and camembert style cheese, feta,, blue and a reblochon inspired washed rind.

They were sharing with Nimbi Valley Dairy up in Northern New South Wales who specialises in goat milk and cheeses. I will have to try next time.

Both companies, as well as Pecora Dairy also from Robertson are members of the Australian Specialist Cheesemakers' Association.

Miffy Rigby, the New Food Editor for Fairfax Media, introducing Matt Moran to the crowd
MIffy Rigby has worked in food for nearly two decades as a cook, journalist, editor and events host, and at Fairfax will also work across the The Sydney Morning Herald Pyrmont Growers’ Market and NSW Food & Wine Festival presented by Citi.
She was national chief food and drink critic for Time Out Australia and appears on several radio and television programs, including as a guest judge on Masterchef Australia. She has also judged the World’s 50 Best Restaurants, the World’s 50 Best Bars, and various national cocktail competitions. She has travelled widely and hosted countless events, including Melbourne Food and Wine Festival, What a Wonderful World and Taste of Sydney. Welcome!

Matt was entertaining the crowd with stories of his apprenticeship, recalling that he thought he would never make it to the grill and was amazed when he first managed to crack an egg with one hand! He certainly knows how to crack a joke as well!

Matt Moran did give us a great show, cooking four dishes in a record time. Two salads: Burrata, tomato and cucumber salad and a fig and goat cheese salad, then two meats: Sirloin grass fed and a duck and mango contraption, which I wished I had been allowed to taste! Also, a quick comment on these photos: due to the enormous crowd, it was really difficult to get the right angles and the closeness I usually achieved and I had to use my longer zoom lens all the time. Sorry folks...

Matt did get all the ingredients from the market and adapted some of his recipes to accommodate what was available. Hence the name of his new book and the philosophy behind all his cooking.

The good people of "Block 11" growers of magnificent organic vegetables
The market population of stallholders is pretty stable at this monthly gathering. But today, the attraction is on stage again as we are meeting the legendary Stephanie Alexander, the godmother of Australian cuisine, launching a new revised and augmented edition of her most famous book "The Cook's Companion" which allegedly graces the shelves of 600,000 kitchens. SMH ran out of copies to sign before 9.30 am when I got there for the second "apparition" on stage of "Sainte Stephanie of the Kitchen"! I have been a regular at her Richmond Hill Café & Larder in Melbourne and my friend Janine S. works occasionally for her Kitchen Garden Foundation, now active in almost 800 schools around Australia, but I had never met her in person. Well this is no longer the case as of last Saturday!

Biota Dining and Cloudy Bay at the Everleigh Markets and a few others - 11/10/2014

Well, when I heard that James Viles would bring some his crew to cook a storm at the Everleigh Markets, I had to get up early and get myself there in a hurry! I was not disappointed as I had a chance to taste again his fabulous mandarin sorbet, with a twist this time: peach sorbet and jelly and cryogenic roses and a glass of Sauvignon blanc from Cloudy Bay NZ, way before 10.00am...

We are so lucky here in Sydney! Spring has sprung and we enjoy a perfect 25 degrees today with a light wind, and we are about to be taken on a journey, a food journey that is, for the whole month of October here and then on to Melbourne and Canberra with over 500 events planned around the city and amazing international guests like David Thompson, who introduced Thai food to Australia 20 years ago and is now returning to Sydney, Yotam Ottolenghi the king of Eastern Mediterranean flavours based in London, Alice Waters the US Chef owner of Chez Panisse in Berkeley and finallyMassino Bottura from Osteria Francescana, named #3 best restaurant in the World.
The kick off event took place at the monthly SMH Pyrmont Growers Market with Adam Liaw, MasterChef winner in 2010 and television Chef extraordinaire, as well as Movida famous Frank Camorra with restaurants in Melbourne and Sydney. Both were launching new books, and took the time to talk to their fans and sign  their books for them with a smile...Votre serviteur was there first row, having booked premium seats to each event. And it was certainly worth the token money asked for attending! Here is my report:

Adam Liaw cooks an Asian Storm

We are so grateful that Adam left a career in law to pursue his passion for Asian cuisine. He is a passionate cook and is extremely knowledgeable of all Asian cuisines, including Korean, the theme for today, as well as Japanese - his wife is Japanese - and Malaysian, Chinese and Singaporean which are his heritage. He is also a natural presenter, injecting his entusiasm and personal style in his TV shows.
He prepared with some extra help Korean Grilled Pork Belly and fried noodles.You can find the recipes in his new book: Adam's Big Pot published by Hachette. Here are some photos of his demonstration:

Frank Camorra cooks recipes from the South of Spain

The good humoured Frank Camorra
The always jovial Frank Camorra relocated with his family to Melbourne when he was five years old. It is not until 2000 that he had a chance to go back to Spain and work in a Michelin stared restaurant and moved back to Melbourne to open MoViDa in 2004, as he was so impressed with the vitality of the food scene in his birth country. He has returned many times since with Richard Cornish the food editor of The Age and Alan Benson as their photographer. Frank was presenting his latest book - Movida Solera - and cooking two recipes from it: pinchitos morunos and ensalada de remolacha. Here we are:
